Our 100% grassfed Icelandic lamb is mild, tender and flavourful! The sheep are certified organic and our flock is regeneratively grazed. 

Lamb can be ordered by the:

  • Quarter Lamb Sampler: 9lbs at $20/lb
  • Half Lamb: 18lbs at $19/lb
  • Whole Lamb: 36lbs of cuts at $18/lb

Let us know your cutting preferences - if you're not sure how you'd like your lamb cut, please review the descriptions in the drop-down section below. Your order will be ready starting November 2024.

When you place your order, we charge you approximately 50% of your final total. Making a deposit at the time of ordering helps us pay for costs that we incur throughout the growing season, like feed or labour. When you collect your order, we will subtract your deposited amount from your full order total, and just your remaining amount will be due at that time.

Your lamb will be available for on-farm pickup or neighbourhood delivery. For neighbourhood delivery, a fee of $10 will be applied to your order and this option is available in Wakefield, Chelsea, Hull, and central Ottawa. 

Our flock of Icelandic sheep are certified organic, 100% grassfed, and spend their lives grazing the pastures on our regenerative farm. While they lose their organic status when the leave the farm, they are transported directly to a government-inspected facility by us, where they are handled in compliance with the norms of the organic standard. 

Please note - you can also get lamb by the cut during the market season from our booth at the Wakefield Farmers' Market. Our by-the-cut pricing is higher than the bulk pricing offered for advance orders. 

How it Works

By placing an order, you are confirming the amount you will purchase. Your deposit amount confirms your order and your final payment will be due when you pick up the products. We charge for the exact weight of the products that you take home, minus your deposit amount. 

Please note that the different products are available at slightly different times. We will work together with you to make it as easy as possible for you to get your order - either by on-farm pickup when you can enjoy the farm sights and meet the animals; or by neighbourhood delivery. Whether you're getting everything together at once, or a little at a time through the fall season as products become available, we will stay in touch with you the whole time so you know what to expect.

Cutting Preferences

Below we've outlined what you can expect when you order a Half Lamb. Your half lamb will include approximately 16-20 lbs of cuts of meat, packaged and ready for you to take home and enjoy. The description below will give you a general understanding of how you can choose to have your half lamb cut, although the exact cuts will vary a little. The number in brackets indicates how many packages of each type of cut. For a Whole Lamb, you can double this, and for a Quarter Lamb, you can expect approximately half.

"The Usual" includes a range of roasting, grilling, and stewing cuts. Cuts in a Half Lamb include: boneless shoulder roast (1), rack of ribs (1), loin chops (2 x 4 chops), bone-in hind leg roast (1), bone-in shanks (2), ground lamb (2-3), lamb stewing meat (1-2), soup bones (2), and organs (2).

"Roaster's Delight" focuses on roasting and braising cuts. Cuts in Half Lamb include: bone-in shoulder roast (1), rack of ribs (1), loin roast (1), bone-in shanks (2), bone-in hind leg roast (1), ground lamb(1-3), lamb stewing meat (1-2), soup bones (1-2), and organs (2). 

"Keep it Simple" is great for those looking for more quicker-cooking cuts, great for the BBQ or the grill. Cuts in a Half Lamb include: a mix of loin, rib, & shoulder chops (4 x 4 chops), ground lamb (3-4), lamb sausages (2-3), lamb stewing meat (2-3) and lamb bone broth (1 x 500mL).

"Choose your own (Cooking) Adventure" - You decide! Below I've listed the main parts of the lamb and some options for cutting them. When you choose boneless cuts, you end up with more soup bones at the end. When you choose bone-in cuts, you end up with fewer soup bones at the end. When you choose this option, I will get in touch with you by email to finalize your cutting details. 

  • Neck - as roasting cut, sliced for braising/frying, or added into the ground/stew
  • Shoulder - as chops, bone-in roast, rolled boneless roast, or added to the ground/stew
  • Fore Shank - added to the bone-in shoulder roast, as a small braising roast on its own, or added to ground/stew
  • Ribs - rib chops, rack of ribs, or added to ground/stew
  • Loin - loin chops, loin roast, or added to the ground/stew
  • Hind Leg - Bone-in hind leg roast (half or whole), boneless hind leg roast, extra large hind leg roast with hind shank attached, leg of lamb steaks, or added to the ground/stew
  • Hind Shank - added to the bone-in hind leg roast, as a braising roast on its own, or added to ground/stew
  • You may also choose all sausages, or all ground, or all stew.
